Ingredients:

  • 8 oz low-fat cream cheese, softened
  • 1 cup plain Greek yogurt
  • 1 oz Hidden Valley Ranch Seasoning packet
  • 1 tsp dried dill weed
  • 0.5 tsp garlic powder
  • 1 cup fresh broccoli florets, finely chopped
  • 0.5 cup carrots, finely shredded
  • 0.5 cup red bell pepper, finely diced
  • 0.25 cup green onions, thinly sliced
  • 0.5 cup sharp cheddar cheese, finely shredded

Instructions:

  1. In a medium bowl, whisk the cream cheese and 245g Greek yogurt until velvety and smooth.
  2. Stir in the ranch packet, dried dill, and garlic powder.
  3. Finely chop the broccoli, shred the carrots, and dice the red pepper. Pat the vegetables dry with a paper towel until no visible moisture remains.
  4. Add the broccoli, carrots, peppers, and green onions to the bowl.
  5. Stir in the 60g of shredded cheddar.
  6. Cover the bowl and refrigerate for at least 30 minutes until the flavors have melded.
  7. Give it one last gentle mix before serving to redistribute any settled juices.
