Ingredients:
- 8 oz low-fat cream cheese, softened
- 1 cup plain Greek yogurt
- 1 oz Hidden Valley Ranch Seasoning packet
- 1 tsp dried dill weed
- 0.5 tsp garlic powder
- 1 cup fresh broccoli florets, finely chopped
- 0.5 cup carrots, finely shredded
- 0.5 cup red bell pepper, finely diced
- 0.25 cup green onions, thinly sliced
- 0.5 cup sharp cheddar cheese, finely shredded
Instructions:
- In a medium bowl, whisk the cream cheese and 245g Greek yogurt until velvety and smooth.
- Stir in the ranch packet, dried dill, and garlic powder.
- Finely chop the broccoli, shred the carrots, and dice the red pepper. Pat the vegetables dry with a paper towel until no visible moisture remains.
- Add the broccoli, carrots, peppers, and green onions to the bowl.
- Stir in the 60g of shredded cheddar.
- Cover the bowl and refrigerate for at least 30 minutes until the flavors have melded.
- Give it one last gentle mix before serving to redistribute any settled juices.
