Ingredients:

  • 3.5 large overripe bananas
  • 1/2 cup neutral oil (canola or vegetable)
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 2 tbsp whole milk
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with a parchment paper 'sling' that hangs over the sides. In a large mixing bowl, peel the bananas and mash them thoroughly with a fork or potato masher until they reach a liquid consistency with only a few small lumps.
  2. Add the neutral oil, granulated sugar, and brown sugar to the mashed bananas. Whisk vigorously with a fork until the mixture appears glossy. Stir in the egg, milk, and vanilla extract until completely incorporated.
  3. Place a sieve over the bowl and sift in the all-purpose flour, baking soda, salt, and cinnamon. Use a spatula to gently fold the dry ingredients into the wet base just until no white streaks of flour remain. Do not overmix.
  4. Pour the batter into the prepared loaf pan. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
