Ingredients:
- 3.5 large overripe bananas
- 1/2 cup neutral oil (canola or vegetable)
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 2 tbsp whole milk
- 1 1/2 cups all-purpose flour, spooned and leveled
- 1 tsp baking soda
- 1/2 tsp fine sea salt
- 1/2 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with a parchment paper 'sling' that hangs over the sides. In a large mixing bowl, peel the bananas and mash them thoroughly with a fork or potato masher until they reach a liquid consistency with only a few small lumps.
- Add the neutral oil, granulated sugar, and brown sugar to the mashed bananas. Whisk vigorously with a fork until the mixture appears glossy. Stir in the egg, milk, and vanilla extract until completely incorporated.
- Place a sieve over the bowl and sift in the all-purpose flour, baking soda, salt, and cinnamon. Use a spatula to gently fold the dry ingredients into the wet base just until no white streaks of flour remain. Do not overmix.
- Pour the batter into the prepared loaf pan. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
