Ingredients:
- 2 medium yellow summer squash (approx. 1 lb / 450g)
- 2 medium zucchini (approx. 1 lb / 450g)
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
Instructions:
- Wash the squash and zucchini. Using a chef's knife, cut the vegetables on a diagonal (bias) into planks approximately 3/4-inch (2cm) thick.
- Place the planks in a large mixing bowl. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Toss gently with your hands to ensure every inch is coated.
- Preheat the grill to medium-high and lightly oil the grates.
- Lay the squash planks across the grates. Grill for 3–5 minutes per side until deep brown grill marks form and the flesh is tender but still has a slight snap.
