Ingredients:

  • 2 medium yellow summer squash (approx. 1 lb / 450g)
  • 2 medium zucchini (approx. 1 lb / 450g)
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder

Instructions:

  1. Wash the squash and zucchini. Using a chef's knife, cut the vegetables on a diagonal (bias) into planks approximately 3/4-inch (2cm) thick.
  2. Place the planks in a large mixing bowl. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Toss gently with your hands to ensure every inch is coated.
  3. Preheat the grill to medium-high and lightly oil the grates.
  4. Lay the squash planks across the grates. Grill for 3–5 minutes per side until deep brown grill marks form and the flesh is tender but still has a slight snap.
