Ingredients:
- 1 medium head (approx. 2 lbs / 900g) Green Cabbage
- 3 tbsp (45ml) Olive Oil
- 3 cloves (15g) Garlic, minced
- 1 tsp (5g) Salt
- ½ tsp (3g) Black pepper
- ½ tsp (3g) Smoked paprika
- ¼ cup (30g) Parmesan cheese, grated
- 1 tbsp (15ml) Fresh lemon juice
Instructions:
- Remove any wilted outer leaves. Place the cabbage on its side and slice vertically into 1-inch (2.5cm) thick rounds, keeping the core intact.
- In a small bowl, whisk together the olive oil, minced garlic, salt, pepper, and smoked paprika.
- Brush the seasoning mixture generously over both sides of each cabbage steak, ensuring the oil seeps into the crevices between the leaves.
- Place steaks on a parchment-lined baking sheet and roast at 400°F (200°C) for 15 minutes.
- Carefully flip the steaks using a wide spatula.
- Sprinkle the grated Parmesan cheese on top and roast for an additional 10 minutes, or until edges are charred dark brown and the center is tender.
- Remove from oven and drizzle with fresh lemon juice before serving.
