Ingredients:

  • 1 medium head (approx. 2 lbs / 900g) Green Cabbage
  • 3 tbsp (45ml) Olive Oil
  • 3 cloves (15g) Garlic, minced
  • 1 tsp (5g) Salt
  • ½ tsp (3g) Black pepper
  • ½ tsp (3g) Smoked paprika
  • ¼ cup (30g) Parmesan cheese, grated
  • 1 tbsp (15ml) Fresh lemon juice

Instructions:

  1. Remove any wilted outer leaves. Place the cabbage on its side and slice vertically into 1-inch (2.5cm) thick rounds, keeping the core intact.
  2. In a small bowl, whisk together the olive oil, minced garlic, salt, pepper, and smoked paprika.
  3. Brush the seasoning mixture generously over both sides of each cabbage steak, ensuring the oil seeps into the crevices between the leaves.
  4. Place steaks on a parchment-lined baking sheet and roast at 400°F (200°C) for 15 minutes.
  5. Carefully flip the steaks using a wide spatula.
  6. Sprinkle the grated Parmesan cheese on top and roast for an additional 10 minutes, or until edges are charred dark brown and the center is tender.
  7. Remove from oven and drizzle with fresh lemon juice before serving.
