Ingredients:

  • 2 medium zucchinis (approx. 1 lb / 450g), sliced into ½-inch thick rounds
  • 1 tbsp (15ml) extra-virgin olive oil
  • 1 tsp (5g) garlic powder
  • 1 tsp (5g) dried Italian seasoning
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) cracked black pepper
  • 2 tbsp (10g) shaved Parmesan cheese
  • 1 tbsp (15ml) fresh lemon juice

Instructions:

  1. Wash the zucchini and pat them completely dry with paper towels, then slice into rounds approximately ½ inch thick.
  2. In a large mixing bowl, whisk together the olive oil, garlic powder, Italian seasoning, salt, and pepper.
  3. Toss the zucchini slices in the marinade mixture until every piece is thinly and evenly coated.
  4. Preheat the outdoor grill to medium-high heat (400-450°F / 200-230°C).
  5. Place the slices directly on the grates, close the lid, and cook for 3 minutes without moving them.
  6. Flip the slices using tongs and cook for another 2-3 minutes until tender with deep grill marks.
  7. Remove from grill and optionally garnish with shaved Parmesan cheese and fresh lemon juice.
