Ingredients:
- 2 medium zucchinis (approx. 1 lb / 450g), sliced into ½-inch thick rounds
- 1 tbsp (15ml) extra-virgin olive oil
- 1 tsp (5g) garlic powder
- 1 tsp (5g) dried Italian seasoning
- ½ tsp (3g) sea salt
- ¼ tsp (1g) cracked black pepper
- 2 tbsp (10g) shaved Parmesan cheese
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Wash the zucchini and pat them completely dry with paper towels, then slice into rounds approximately ½ inch thick.
- In a large mixing bowl, whisk together the olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Toss the zucchini slices in the marinade mixture until every piece is thinly and evenly coated.
- Preheat the outdoor grill to medium-high heat (400-450°F / 200-230°C).
- Place the slices directly on the grates, close the lid, and cook for 3 minutes without moving them.
- Flip the slices using tongs and cook for another 2-3 minutes until tender with deep grill marks.
- Remove from grill and optionally garnish with shaved Parmesan cheese and fresh lemon juice.
