Ingredients:

  • 4 tbsp (56g) unsalted butter
  • 4 cloves (12g) garlic, minced finely
  • ½ tsp (3g) garlic powder
  • 2 tbsp (16g) all-purpose flour
  • 1 cup (240ml) heavy cream

Instructions:

  1. Melt the butter over medium-low heat. Once bubbling, stir in the minced garlic and sauté for 1–2 minutes until fragrant and translucent, but not brown. Stir in the garlic powder.
  2. Sprinkle the flour over the garlic butter and whisk constantly for about 60 seconds until a pale gold color and nutty aroma develop.
  3. Slowly pour in the heavy cream in three stages, whisking vigorously between each addition to ensure a smooth emulsion.
  4. Continue simmering for 3–5 minutes until the sauce thickens enough to coat the back of a spoon.
