Ingredients:

  • 12 oz (340g) Penne or Fusilli pasta
  • 1 tbsp (15ml) Olive oil
  • 12 oz (340g) Precooked Italian Chicken Sausage, sliced into rounds
  • 3 cloves (15g) Garlic, minced
  • 1/2 cup (120ml) Heavy cream
  • 1/2 cup (50g) Freshly grated Parmesan cheese
  • 1/2 cup (120ml) Reserved pasta water
  • Salt and black pepper to taste
  • 3 cups (90g) Fresh baby spinach
  • 1 tsp (5g) Red pepper flakes
  • Fresh parsley for garnish

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve at least 1 cup of starchy pasta water before draining the noodles.
  2. Heat olive oil in a 12-inch skillet over medium-high heat. Add the sliced chicken sausage and sear for 3–5 minutes without stirring too often, until the edges are mahogany-colored and crisp.
  3. Lower the heat to medium, stir in the minced garlic and red pepper flakes, and sauté for 60 seconds until fragrant.
  4. Pour the heavy cream and 1/2 cup of reserved pasta water into the skillet. Bring to a gentle simmer for 2 minutes.
  5. Stir in the Parmesan cheese until melted and smooth.
  6. Toss in the cooked pasta and baby spinach. Stir continuously for 1–2 minutes until the spinach is wilted and the sauce clings to the pasta.
