Ingredients:
- 4 (6 oz) boneless skinless chicken breasts
- 1 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp cracked black pepper
- 4 oz cream cheese, softened
- 2 cups fresh spinach, finely chopped
- 4 oz mozzarella cheese, shredded
- 2 cloves garlic, minced
- ¼ tsp onion powder
Instructions:
- Place chicken breasts between two sheets of plastic wrap and use a meat mallet to pound to an even thickness of about ¼ inch (6mm).
- Pat the meat dry with paper towels and rub both sides with olive oil, smoked paprika, salt, and black pepper.
- In a small bowl, combine softened cream cheese, chopped spinach, minced garlic, and onion powder until smooth.
- Spread approximately 2 tbsp of the cream cheese mixture over each chicken breast, leaving a ½ inch border around the edges.
- Evenly distribute a handful of shredded mozzarella over the cream cheese layer.
- Roll the chicken breasts tightly from the narrow end to the wide end and place them seam-side down in a baking dish.
- Bake at 375°F (190°C) for 25–30 minutes until the edges are mahogany-colored and the internal temperature reaches 165°F (74°C).
