Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tsp (5g) baking powder
- 1 ½ tsp (4g) ground cinnamon
- ½ tsp (3g) salt
- ½ cup (113g) unsalted butter, softened
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- ½ cup (120ml) whole milk
- 2 cups (300g) peeled and diced Granny Smith apples
- ¼ cup (50g) packed brown sugar
- 1 tsp (2g) ground cinnamon
- 2 tbsp (28g) unsalted butter, melted
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or springform pan and line the bottom with parchment paper. Dice the Granny Smith apples into uniform ½-inch pieces.
- In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is pale and thick. Beat in the eggs one at a time, followed by the vanilla extract.
- Slowly stir in the flour, baking powder, cinnamon, and salt, alternating with the milk. Gently fold in the diced apples until evenly coated in the batter.
- Pour the batter into the prepared pan and smooth the top. In a small bowl, whisk the brown sugar, cinnamon, and melted butter into a paste and sprinkle evenly across the top of the batter.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean and the top is mahogany-colored.
