Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tsp (5g) baking powder
  • 1 ½ tsp (4g) ground cinnamon
  • ½ tsp (3g) salt
  • ½ cup (113g) unsalted butter, softened
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • ½ cup (120ml) whole milk
  • 2 cups (300g) peeled and diced Granny Smith apples
  • ¼ cup (50g) packed brown sugar
  • 1 tsp (2g) ground cinnamon
  • 2 tbsp (28g) unsalted butter, melted

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or springform pan and line the bottom with parchment paper. Dice the Granny Smith apples into uniform ½-inch pieces.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is pale and thick. Beat in the eggs one at a time, followed by the vanilla extract.
  3. Slowly stir in the flour, baking powder, cinnamon, and salt, alternating with the milk. Gently fold in the diced apples until evenly coated in the batter.
  4. Pour the batter into the prepared pan and smooth the top. In a small bowl, whisk the brown sugar, cinnamon, and melted butter into a paste and sprinkle evenly across the top of the batter.
  5. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean and the top is mahogany-colored.
