Ingredients:
- 6 large Granny Smith apples, peeled and sliced 1/4 inch thick
- 1/2 cup packed light brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp cornstarch
- 1 tbsp fresh lemon juice
- 3 tbsp unsalted butter
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup whole milk
- 4 tbsp unsalted butter, melted and cooled
Instructions:
- Melt 3 tbsp unsalted butter in a large skillet over medium heat. Add the sliced apples and sauté for 5–7 minutes until they just begin to soften but still retain a crisp edge.
- In a small bowl, whisk together brown sugar, cinnamon, and cornstarch. Sprinkle this over the apples and stir constantly for 2 minutes.
- Stir in the lemon juice until the mixture transforms into a glossy syrup. Pour the mixture immediately into a 9x9 inch baking dish.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- Pour in the whole milk and melted butter. Stir with a spatula until just combined; the batter should be thick and slightly lumpy.
- Drop spoonfuls of the batter over the hot apple filling, leaving small gaps for the syrup to bubble through.
- Bake at 375°F (190°C) for 35–40 minutes until the topping is deep golden brown and the filling is bubbling.
- Let the cobbler sit for 15 minutes before serving to allow the filling to set.
