Ingredients:
- 1/2 cup extra virgin olive oil
- 1/4 cup lime juice
- 1 tbsp maple syrup
- 1 clove garlic
- 1 cup fresh cilantro
- 1/2 tsp sea salt
- 1/4 tsp ground cumin
- 1/4 tsp black pepper
Instructions:
- Place the lime juice, maple syrup, garlic clove, salt, cumin, and black pepper into the blender. Pulse 3-4 times until the garlic is completely pulverized.
- Turn the blender to medium-low. While the motor is running, slowly stream in the olive oil in a thin, steady line until the mixture transforms into a creamy emulsion.
- Add the fresh cilantro leaves and blend on high for 10-15 seconds until the leaves are finely speckled throughout the dressing.
