Ingredients:
- 6 cups (1.4 kg) peeled and sliced Granny Smith or Honeycrisp apples
- 2 tbsp (30g) lemon juice
- ½ tsp (3g) salt
- 4 tbsp (57g) unsalted butter
- ½ cup (100g) packed light brown sugar
- 3 tbsp (45ml) sweetened condensed milk
- 1 tsp (5g) vanilla extract
- 1 tbsp (8g) ground cinnamon
- ¼ tsp (1g) ground nutmeg
- 3 tbsp (24g) cornstarch
- 1 tbsp (8g) all-purpose flour
Instructions:
- Combine the sliced apples, lemon juice, and salt in a large bowl. Let them sit for 10 minutes to draw out surface moisture.
- In a saucepan over medium heat, melt the butter. Stir in the brown sugar and sweetened condensed milk.
- Whisk the caramel mixture constantly for 3–5 minutes until it begins to bubble and smells toasted. Remove from heat and stir in the vanilla extract.
- Return the pan to medium heat and fold in the macerated apples.
- Sprinkle the cinnamon, nutmeg, cornstarch, and flour evenly over the top and stir gently to coat.
- Simmer for 5–8 minutes, stirring occasionally, until the liquid has thickened into a glossy glaze and apples are slightly softened.
