Ingredients:

  • 6 cups (1.4 kg) peeled and sliced Granny Smith or Honeycrisp apples
  • 2 tbsp (30g) lemon juice
  • ½ tsp (3g) salt
  • 4 tbsp (57g) unsalted butter
  • ½ cup (100g) packed light brown sugar
  • 3 tbsp (45ml) sweetened condensed milk
  • 1 tsp (5g) vanilla extract
  • 1 tbsp (8g) ground cinnamon
  • ¼ tsp (1g) ground nutmeg
  • 3 tbsp (24g) cornstarch
  • 1 tbsp (8g) all-purpose flour

Instructions:

  1. Combine the sliced apples, lemon juice, and salt in a large bowl. Let them sit for 10 minutes to draw out surface moisture.
  2. In a saucepan over medium heat, melt the butter. Stir in the brown sugar and sweetened condensed milk.
  3. Whisk the caramel mixture constantly for 3–5 minutes until it begins to bubble and smells toasted. Remove from heat and stir in the vanilla extract.
  4. Return the pan to medium heat and fold in the macerated apples.
  5. Sprinkle the cinnamon, nutmeg, cornstarch, and flour evenly over the top and stir gently to coat.
  6. Simmer for 5–8 minutes, stirring occasionally, until the liquid has thickened into a glossy glaze and apples are slightly softened.
