Ingredients:

  • 1 lb Yukon Gold potatoes, small-diced
  • 4 cups green cabbage, shredded and chopped
  • 1 medium yellow onion, finely diced
  • 6 oz thick-cut bacon, diced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes

Instructions:

  1. Dice the potatoes and cabbage into uniform 1/4-inch pieces to ensure even cooking.
  2. Place diced bacon in a cold skillet and turn heat to medium; render fat until bacon is crisp and mahogany-colored.
  3. Add diced onions to the skillet and sauté for 3-4 minutes until translucent, then stir in minced garlic for 30 seconds.
  4. Increase heat to medium-high and add diced potatoes in a single layer; sear undisturbed for 5 minutes to develop a crust.
  5. Stir in the cabbage and smoked paprika; cook occasionally until cabbage is wilted and potatoes are fork-tender.
  6. Season with salt, black pepper, and red pepper flakes, stir once, and remove from heat immediately.
