Ingredients:
- 1 lb Yukon Gold potatoes, small-diced
- 4 cups green cabbage, shredded and chopped
- 1 medium yellow onion, finely diced
- 6 oz thick-cut bacon, diced
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp cracked black pepper
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes
Instructions:
- Dice the potatoes and cabbage into uniform 1/4-inch pieces to ensure even cooking.
- Place diced bacon in a cold skillet and turn heat to medium; render fat until bacon is crisp and mahogany-colored.
- Add diced onions to the skillet and sauté for 3-4 minutes until translucent, then stir in minced garlic for 30 seconds.
- Increase heat to medium-high and add diced potatoes in a single layer; sear undisturbed for 5 minutes to develop a crust.
- Stir in the cabbage and smoked paprika; cook occasionally until cabbage is wilted and potatoes are fork-tender.
- Season with salt, black pepper, and red pepper flakes, stir once, and remove from heat immediately.
