Ingredients:
- 2 ½ cups (315g) all-purpose flour
- 1 cup (225g) unsalted butter, chilled and cubed
- 1 tsp (6g) salt
- 1 tbsp (12g) granulated sugar
- 6-8 tbsp (90-120ml) ice water
- 6 cups (approx. 1.2kg) fresh peaches, peeled and sliced 1/4 inch thick
- ¾ cup (150g) packed light brown sugar
- ¼ cup (50g) granulated sugar
- 3 tbsp (24g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1 tsp (5ml) vanilla extract
- ¼ tsp (1.5g) salt
Instructions:
- Whisk flour, salt, and sugar in a bowl.
- Work the chilled butter into the flour using a pastry cutter until the mixture resembles coarse crumbs with some pea-sized chunks remaining.
- Gradually add ice water, one tablespoon at a time, stirring until the dough just holds together.
- Divide dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
- In a large bowl, combine sliced peaches, brown sugar, white sugar, cornstarch, cinnamon, lemon juice, vanilla, and salt.
- Let the mixture sit for 15 minutes to allow a thick syrup to form.
- On a floured surface, roll out the base dough.
