Ingredients:

  • 3 lbs apples, peeled, cored, and sliced (mix of Granny Smith and Honeycrisp)
  • 1 tbsp lemon juice
  • 1/2 cup unsalted butter
  • 1/2 tsp sea salt
  • 1/2 cup light brown sugar, packed
  • 2 tbsp cornstarch
  • 2 tbsp all-purpose flour
  • 1 tbsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg

Instructions:

  1. Place the unsalted butter in a heavy-bottomed skillet over medium heat. Melt and continue cooking, whisking occasionally, until the foam subsides and mahogany-colored bits form at the bottom with a nutty aroma. Remove from heat immediately.
  2. Stir the sea salt into the browned butter and set aside.
  3. In a large bowl, toss the sliced apples with lemon juice to prevent oxidation.
  4. In a separate small bowl, whisk together the light brown sugar, cornstarch, all-purpose flour, ground cinnamon, ground cloves, and ground nutmeg.
  5. Pour the dry spice and sweetener mixture over the apples and toss until every slice is evenly coated.
  6. Pour the browned butter, including all toasted bits, over the coated apples.
  7. Return the mixture to the skillet over medium-low heat and sauté until apples are tender and the sauce has reduced.
