Ingredients:
- 4 cups (600g) cooked chicken breast, cubed or shredded
- 3/4 cup (100g) celery, finely diced
- 1/4 cup (40g) red onion, minced
- 1/2 cup (75g) red grapes, halved
- 2 tbsp (8g) fresh parsley, chopped
- 1/2 cup (120g) mayonnaise
- 1/4 cup (60g) plain Greek yogurt
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5g) Dijon mustard
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
Instructions:
- Dice the cooked chicken into uniform 1/2 inch pieces. Finely mince the celery and red onion, and slice the grapes in half.
- In a small bowl or large mixing bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and black pepper until smooth.
- Gently fold the chicken, celery, onion, and grapes into the dressing until evenly coated. Stir in the fresh parsley last.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld and the dressing to set.
