Ingredients:

  • 4 cups (600g) cooked chicken breast, cubed or shredded
  • 3/4 cup (100g) celery, finely diced
  • 1/4 cup (40g) red onion, minced
  • 1/2 cup (75g) red grapes, halved
  • 2 tbsp (8g) fresh parsley, chopped
  • 1/2 cup (120g) mayonnaise
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5g) Dijon mustard
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Dice the cooked chicken into uniform 1/2 inch pieces. Finely mince the celery and red onion, and slice the grapes in half.
  2. In a small bowl or large mixing bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and black pepper until smooth.
  3. Gently fold the chicken, celery, onion, and grapes into the dressing until evenly coated. Stir in the fresh parsley last.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld and the dressing to set.
