Ingredients:

  • 1 cup (225g) Full Fat Cottage Cheese
  • 1 cup (125g) Self-Rising Flour
  • 1 tbsp (15ml) Egg White
  • 1 large Egg (for egg wash)
  • 2 tbsp Everything Bagel Seasoning

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place the cottage cheese in a high-speed blender or use an immersion blender to puree until completely smooth and velvety with no visible curds.
  3. In a large mixing bowl, whisk the self-rising flour. Add the pureed cottage cheese and the optional egg white to the center.
  4. Using a silicone spatula, fold the ingredients together until a shaggy dough forms. Transfer to a lightly floured surface and knead gently for 1-2 minutes until the dough is smooth but not over-worked.
  5. Divide the dough into 4 equal portions. Roll each into a rope and join the ends to form a circle, or roll into a ball and poke a hole through the center.
  6. Place the bagels on the prepared baking sheet. Beat the large egg and brush it liberally over the tops of each bagel, then sprinkle with Everything Bagel Seasoning.
  7. Bake for 25 minutes or until the bagels are golden brown and sound hollow when tapped. Let them cool on a wire rack for at least 10 minutes before slicing.
