Ingredients:
- 1 cup (225g) Full Fat Cottage Cheese
- 1 cup (125g) Self-Rising Flour
- 1 tbsp (15ml) Egg White
- 1 large Egg (for egg wash)
- 2 tbsp Everything Bagel Seasoning
Instructions:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Place the cottage cheese in a high-speed blender or use an immersion blender to puree until completely smooth and velvety with no visible curds.
- In a large mixing bowl, whisk the self-rising flour. Add the pureed cottage cheese and the optional egg white to the center.
- Using a silicone spatula, fold the ingredients together until a shaggy dough forms. Transfer to a lightly floured surface and knead gently for 1-2 minutes until the dough is smooth but not over-worked.
- Divide the dough into 4 equal portions. Roll each into a rope and join the ends to form a circle, or roll into a ball and poke a hole through the center.
- Place the bagels on the prepared baking sheet. Beat the large egg and brush it liberally over the tops of each bagel, then sprinkle with Everything Bagel Seasoning.
- Bake for 25 minutes or until the bagels are golden brown and sound hollow when tapped. Let them cool on a wire rack for at least 10 minutes before slicing.
