Ingredients:

  • 3 large overripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1 cup milk
  • 1 large egg
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp fine sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large bowl, mash the bananas until few lumps remain.
  2. Whisk in the peanut butter, milk, egg, maple syrup, and vanilla until the mixture is a smooth, uniform tan color.
  3. Add the rolled oats, baking powder, cinnamon, and salt directly into the wet mixture and fold gently with a spatula until the oats are fully submerged.
  4. Pour the batter into a parchment-lined 8x8 inch baking dish and smooth the top with a spatula.
  5. Bake for 25–30 minutes until the edges are golden brown and slightly pulling away from the sides, and the center feels firm to a light touch.
  6. Remove from the oven and let the bake rest for 10 minutes to allow the center to set before slicing.
