Ingredients:

  • 3 large overripe bananas (approx. 375g)
  • 115g unsalted butter, melted and cooled
  • 150g brown sugar, packed
  • 1 large egg, room temperature
  • 1 tbsp pure vanilla extract
  • 190g all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 175g semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, mash the bananas using a fork or potato masher until they reach a liquid consistency with only small lumps remaining.
  3. Whisk in the melted butter, followed by the brown sugar, egg, and vanilla extract. Stir until the mixture looks glossy and cohesive.
  4. Sift the flour, baking soda, and salt directly into the wet ingredients. Use a silicone spatula to gently fold the mixture until just combined, ensuring you do not overmix.
  5. Fold in the chocolate chips. Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a skewer inserted into the center comes out clean.
