Ingredients:
- 3 large overripe bananas (approx. 375g)
- 115g unsalted butter, melted and cooled
- 150g brown sugar, packed
- 1 large egg, room temperature
- 1 tbsp pure vanilla extract
- 190g all-purpose flour
- 1 tsp baking soda
- 0.5 tsp fine sea salt
- 175g semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, mash the bananas using a fork or potato masher until they reach a liquid consistency with only small lumps remaining.
- Whisk in the melted butter, followed by the brown sugar, egg, and vanilla extract. Stir until the mixture looks glossy and cohesive.
- Sift the flour, baking soda, and salt directly into the wet ingredients. Use a silicone spatula to gently fold the mixture until just combined, ensuring you do not overmix.
- Fold in the chocolate chips. Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a skewer inserted into the center comes out clean.
