Ingredients:
- 1/2 cup warm whole milk
- 2 1/4 tsp active dry yeast
- 2 tbsp honey
- 1/2 cup mashed overripe banana
- 4 tbsp unsalted butter, softened
- 3 cups bread flour
- 1/2 tsp salt
- 4 tbsp unsalted butter, softened
- 1/2 cup coconut sugar
- 2 tbsp ground cinnamon
- 1/2 cup finely chopped walnuts
- 1 small banana, thinly sliced
- 4 oz softened cream cheese
- 1/4 cup plain Greek yogurt
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 2 tbsp milk
Instructions:
- Combine warm milk, honey, and yeast. Let sit for 5-10 minutes until frothy.
- Mix in the mashed banana and softened butter. Gradually add bread flour and salt, kneading until the dough is smooth, elastic, and pulls away from the sides of the bowl.
- Place dough in a lightly greased bowl, cover with a damp cloth, and let rise in a warm area for 60-90 minutes until doubled in size.
- Punch down the dough and roll it into a 12x18 inch rectangle using a rolling pin.
- Spread softened butter over the dough, then evenly sprinkle coconut sugar, cinnamon, and chopped walnuts. Arrange sliced banana rounds across the surface.
- Roll the dough tightly into a log and cut into 12 equal rolls using unflavored dental floss for clean edges.
- Place rolls in a 9x13 inch baking pan and allow to rise again until puffy.
- Bake for 30 minutes or until golden brown.
- Prepare glaze by whisking together cream cheese, Greek yogurt, maple syrup, vanilla, and milk until smooth. Spread over warm rolls.
