Ingredients:

  • 4 Walleye Fillets (approx. 6 oz each)
  • 3 tbsp Unsalted Butter, melted
  • 1 tbsp Extra Virgin Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • 1 tbsp Lemon Zest
  • 2 tbsp Fresh Parsley, finely chopped
  • 1 tbsp Fresh Dill, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Kosher Salt
  • ½ tsp Cracked Black Pepper
  • ½ tsp Paprika

Instructions:

  1. Preheat your oven to 200°C and line a large rimmed baking sheet with parchment paper to prevent sticking. Note: High heat is essential for a quick bake without drying the fish.
  2. Pat the 4 walleye fillets dry using paper towels on both sides.
  3. Whisk together 3 tbsp melted butter, 1 tbsp olive oil, 2 tbsp lemon juice, and 2 cloves minced garlic in a small bowl.
  4. Arrange the fillets on the prepared baking sheet, leaving at least 3 cm of space between each piece.
  5. Brush the butter mixture generously over the top of each fillet until they are well coated.
  6. Sprinkle the 1 tbsp lemon zest, 1 tsp salt, ½ tsp pepper, and ½ tsp paprika evenly over the fish.
  7. Top each fillet with the 2 tbsp chopped parsley and 1 tbsp dill, pressing slightly so they adhere.
  8. Bake for 12 minutes until the fish is opaque and flakes easily with a fork. Note: The internal temperature should hit 63°C.
  9. Remove from the oven and let rest for 2 minutes before serving to allow the juices to redistribute.
