Ingredients:
- 2 lbs firm apples, cored and sliced into 1/2-inch wedges
- 1 tbsp lemon juice
- 1 tbsp melted coconut oil
- 3 tbsp pure maple syrup
- 1 tbsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp sea salt
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the sliced apples with lemon juice and melted coconut oil until every slice is thinly coated. Note: This oil barrier keeps the fruit from drying out.
- Spread the apples in a single layer on the baking sheet, ensuring they are not crowded.
- Roast for 12-15 minutes until the edges just begin turning golden brown.
- While the apples roast, whisk together the maple syrup, ground cinnamon, ground ginger, and sea salt in a small bowl.
- Remove the pan from the oven and drizzle the cinnamon glaze over the hot apples.
- Toss gently with a silicone spatula to coat every wedge.
- Return the pan to the oven for another 5-7 minutes until the glaze is bubbling and has reduced to a thick, mahogany syrup.
