Ingredients:

  • 1.5 lbs boneless skinless chicken breast, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 3 cloves garlic, minced
  • 1 tsp lemon pepper seasoning
  • 1/4 cup almond flour
  • 1/4 tsp paprika

Instructions:

  1. Pat the chicken cubes completely dry with paper towels. In a large bowl, toss the cubes with olive oil, salt, and pepper until evenly coated.
  2. Toss the oiled chicken in a mixture of almond flour and paprika until evenly breaded.
  3. Preheat the air fryer to 400°F (200°C). Place the chicken in the basket in a single layer without stacking.
  4. Air fry for 10–12 minutes, shaking the basket vigorously at the 6-minute mark. Ensure chicken reaches an internal temperature of 165°F (74°C).
  5. Immediately transfer hot chicken to a clean bowl. Pour over lemon juice, lemon zest, minced garlic, and lemon pepper seasoning, then toss quickly to combine.
